Baileys Cheesecake recipe
Recently a very close family member has had to use Sunrise Senior Living and we have
been incredibly impressed with their facilities and their care. They have
produced a series of their favourite recipes and asked if I would like to try
one and share it with you all on the site. They have produced a series of
recipes which are nutritious and tasty and are great for everyone not just the
elderly. One of my favourites from their list was the Baileys Cheesecake.
Baileys
Cheesecake
Serves

Ingredients:
Base
150g
digestive biscuits
75g
unsalted butter
1 tsp
caster sugar
Filling
75ml
Baileys Irish Cream liqueur
500g
cream cheese
100g
caster sugar
100ml
double cream
4 eggs
Method:
1. Line
a 20cm springform tin and grease the sides. 2. Using a food processor, pulse
the digestive biscuits, butter and sugar until combined. 3. Press the mixture
in the base of the tin and refrigerate until set.

Preheat oven at 180˚C/fan 160˚C/gas mark 4. Combine the cream cheese, sugar,
double cream, eggs and Baileys liqueur in a blender. Mix until smooth. Spoon
the mixture evenly over the digestive base. 2. Bake at 180˚C for 40 minutes.
When the cheesecake is almost set turn off the oven and leave to cool in the
oven for 15 minutes. 3. Remove cheesecake from the oven and keep in a cool
place. 4. Slice the cheesecake into 8 pieces
We loved the cheesecake although after a little nibble the
boys turned their noses up at it but between us and friends it had disappeared
within minutes! It’s a great rich and creamy dessert to whisk up and have in
the fridge and personally taste great in the hot summery afternoons with
