Easy Sunday Breakfast - Eggs in Clouds
What better on a lazy autumn morning then a beautifully cooked breakfast? This took about 8 minutes to prepare and cook in total! And they tasted just amazing. The boys managed to waffle down a second batch very quickly.
A fabulous recipe for Eggs in Cloud from Rachel Ray
Ingredients

4 eggs
·
1/4 cup grated pecorino-romano (we
cheated and used cheddar)
·
1/4 cup chopped chives
·
1/4 cup crumbled bacon
·
Pepper
Method
1. Separate eggs,
putting whites in 1 large bowl and yolks in 4 separate small bowls.
Whip whites until stiff peaks form. Fold in cheese, chives and bacon. Spoon
into 4 mounds on parchment-lined baking sheet; make a deep well in center of
each. Bake at 180 degrees for 3 minutes, then and 1 yolk to each well; season
with pepper. Bake until yolks are just set, 2 to 3 minutes. We cooked ours a
little longer maybe 4-5 mins as we like ours well done!
This looks all kinds of nom. If only the husband ate them.. might have to try it on the weekend for myself!
