Quick & Simple Cornflake Cakes

Who doesn’t love a quick and simple bake? Well these arent really a bake but they are quick and delicious. They are also great to make with the kids when they are bored and fed up as they are quick and pretty much instant!

We made these with gluten free cornflakes and dairy free butter with no compromising on the taste or having to fiddle the recipe, so this is pretty safe to go! We have also in the past sub the golden syrup for honey when the supermarket hasn’t delivered!    



Ingredients
50g butter
100g milk or dark chocolate chips or broken into chunks
3 tbsp golden syrup
100g cornflake


Method
Weigh out the ingredients. Older children can do this by themselves with supervision and little ones can help to pour or spoon ingredients into the weighing scales. Put 50g butter, 100g milk or dark chocolate, broken into chunks and 3 tbsp golden syrup in a saucepan or microwavable bowl. Put 100g cornflakes in another large bowl.
Melt the butter, chocolate and golden syrup in the saucepan over a low heat or briefly in the microwave – we found 20 seconds and a stir was enough. Allow to cool a little before pouring over the cornflakes.
Mix the ingredients together gently using a wooden spoon. Spoon the mixture into 12 cupcake cases arranged on a muffin tray or even a baking tray works if needed. Put in the fridge to set or dive in with a spoon immediately!
