Crosta & Mollica Quesadillas
This month we were sent some fabulous flatbreads by Crosta
& Mollica to plate up and review. They offer a traditional
piada flatbread as well as a wholemeal
piada and both are superb for meals options throughout the day.
Both require heating up before using for salads wraps etc and
they taste great with an Italian salad, some falafel and mayo but we decided to
make ours into a gorgeous main meal.
We used The Hairy Bikers recipe as its incredibly filling and
dinner is on your plate within ten minutes!
Ingredients
1 Yellow Pepper, seeds removed, diced
1 small Mango, peeled, diced
8 Cherry Tomatoes, cut into quarters
1 Lime, Juice only
Salt & Pepper
4 Crosta & Mollica Piadas
Leftover cooked chicken or other cold meat such as turkey (we
cooked ours especially for this)
Small handful of Coriander
Green Salad
Method
Salsa – mix up the tomatoes, mango, pepper & lime juice
and put aside.
For the quesadillas, lay two of the Crosta & Mollica
piadas out on a flat surface, top each one with cheese, follow with the
chicken, peppers & coriander. Place the remaining piadas on top and press
down gently.
Heat a flying pan over a medium hot and add one of the
quesadillas to the pan. Fry, without adding any oil for 2-3 minutes on each
side until the tortilla is crisp, the cheese is melted and the chicken heated
through thoroughly. Keep warm whilst you cook the second quesadilla.
To serve, cut the quesadillas into quarters and arrange on
plates. Serve with Salsa & Green Salad on the side.
