Frozen Fish Pie #Coolcookery

Towards the end of the week we all get a little tired and reach for the freezer. Fish fingers & chips, frozen pizza..? What about if I showed you how you could cook a wonderful homemade pie in the same amount of time it takes to put out fish & chips? Did you know the range of frozen foods you can get these days? No longer are they quick convenience foods. They are also some of the highest vitamin levels in vegetables which are frozen. After all they are frozen within an hour or two retaining all that goodness rather than losing it like fresh veg in transport and display (sometimes left for a month in storage!)  So not only is frozen veg & fruit better for you it also creates less waste. After all how often do you buy herbs or onions or mushrooms and use what is needed for the recipe only to have to throw the rest away a day or two later? In fact using frozen food can save you a whopping £250 a year!

Why not start by buying some frozen broccoli or mashed potato to start you off? The British Frozen Food Federation (check out their site – CoolCookery.co.uk) and Britmums have asked me to show you how I cook with frozen food. I love the frozen food aisle and often use the veg from it to make a huge soup at the weekend full of warmth & goodness. But how about a perfect fish pie in the same amount of time as fish & chips? PS it cost the same too! Which would you prefer?

Here we go:

Frozen Fish Pie (4 Servings)

2 frozen Salmon Steaks
Equivalent of half a chopped Onion
Chopped Herbs (we used Coriander)
Frozen Mushrooms
Frozen Peas
Frozen Puff Pastry
Jar of white sauce




Method:


   First of all I would take the puff pastry out the freezer that morning before you head out. Trying to defrost it in the microwave wasn’t my cleverest idea! As to the rest. Just use a peg to seal up what’s left and use again another day. If you like a golden top on your pastry just whip across it with a pastry brush and some milk! Pop the Oven on to 180o and pop in for 45 mins. Pour yourself a well-deserved glass of wine and put your feet up!




There we go. A homemade, full of goodness Fish Pie made in 60seconds! Costing less than fish & chips and providing another four meals at least.
