Gluten Free Jam Tarts




With both Mothers Day and the Easter holidays coming up soon now is the perfect time to introduce you Ciao Gusto, an authentic Italian Deli store available through Ocado. One of the brands Ciao Gusto represents is Santa Rosa who produce the most amazing jams/preserves, which I used for today’s recipe: an ideal make with the children for Spring.. We made the most gorgeous Jam Tarts this week with their preserves! They are naturally gluten free and despite having much less sugar than many of their competitors the taste in just perfect – you really can taste the sunshine in these.


Gluten Free Jam Tarts

Ingredients

250g plain gluten free flour, plus extra for dusting
Pinch of Salt
125g butter
chilled and diced, plus extra for the tin
1 medium egg
1 tbsp cold water
1 vanilla pod, seeds scraped (optional)
50g x3 of Santa Rosa Preserves (we used Cherry, Apricot & Peach)

Method

Put the flour, butter & pinch of salt in a bowl and rub them together between your fingers until the mixture resembles fresh breadcrumbs, stir in the egg and vanilla seeds, if using, with a cutlery knife. Add 1 tbsp cold water, then start to bring the dough together in one lump with your hands. You can add 1 more tbsp of water if it’s not coming together, but try not to add more than that

Heat oven to 200C/180C fan. Butter or lightly dust with flour a 12-hole tart tin, then dust your work surface with flour. Using a straight or fluted round cutter cut out 12 circles, big enough to line the holes in the tin. Dollop 1-2 tsp of your chosen Santa Rosa preserve into each one.

Bake for 15-18 mins or until golden and the filling is starting to bubble a little. Leave to cool in the tin for a few mins then carefully transfer to a wire rack to cool completely.
