Kenwood Mixer - Feather Cake
Every
kitchen needs a good stand mixer and while you can purchase some under £100 the
one which makes people squeal, ohh and ahh, and go into raptures with is of
course the one and only Kenwood
Stand Mixer. When I mentioned to
friends that I was incredibly lucky to lay my hands on one to review they all
demanded to come around and try it out!
So,
what better way to start this hot weather than with a Kenwood party! Of course,
everyone wanted to make a cake so we went to one of my favourites. Tried &
tested and so light and fluffy – perfect for how horribly hot this weather has
become!
Lemon Feather Cake
Ingredients
5oz
castor sugar
Grated
rind of half small lemon
70g
(2 and half oz) potato flour or cornflour
Filling:
150
ml double cream
150g
lemon curd
Method:
Pre-heat oven to 180c 350f Gas mark 4. Beat egg yolks, castor sugar and lemon for 10 -15 mins until light and fluffy and pale and thick. Enough to leave a trail for 8 seconds when lifted. Fold in the potato flour with a metal spoon. Whisk egg whites until stiff but not dry. Fold into the lemon mixture. Pour into the prepared 7” tin and bake for 40 -50 mins or until firm to touch and puffed and golden.
Leave
to cool before turning out. Cool on rack.
To
make the filling –
Whip
the cream, but not too stiff. Some people mix in the lemon curd but I LOVE
lemon curd and used the whole 250g jar. Split cake with serrated knife. And
layer up the lemon curd and whipped cream Sandwich the halves together with the
filling. Dust top with icing sugar. Can be frozen filled if you can manage self-control!

Honestly
I turned around to get a drink from the fridge and they were all up and running
with it. It is a real take it out the box and go machine. Aside from looking
stunning on the side it has such a large diverse usage in the kitchen as I hope
to show you over the summer I believe this is top of my list on all kitchen
equipment!
