Carrot & Coriander Soup - Busy Bees Sensational Soups

Busy Bees Childcare launched a competition earlier on this year asking their nursery teams and their children to enter their competition for Sensational Soup. All the winning entries were then placed together in a fabulous little book to share.


We have soup a couple of times a week at home as I find it’s a great way to get vegetables down my kids. With each recipe is a fabulous bread or biscuit recipe to accompany the soup. I rather love the idea of Tomato Spiral Rolls with the Stone soup. Being gluten free though we’re still tweaking those recipes to work for us but early results are tasty!
One of the favourite soups in our house is Carrot & Coriander Soup. We made it a little chunkier then the one in the book and lowered the quantity’s a little but we had to share this easy recipe with you!

Creamy Carrot & Coriander Soup

Ingredients


500g Carrots – peeled & sliced
2 Celery Sticks – sliced
1 Medium Onion – sliced & diced.
500g Potatoes – peeled & cubed (about 2 medium/large)
Small bunch of Coriander – chopped
1 ½ litres of stock
1tsp Sunflower Spread
100ml Cream


Method

Melt the sunflower spread on medium heat and add carrots, celery & onion. Turn down to a low heat and sweat the vegetables for about 10minutes until then begin to soften.
Add the stock and potatoes and cook for a further 20 minutes. Then blend.
You can then stir in the cream & add fresh chopped coriander on top to taste. We also add some black pepper corns.

The recipes in the book are superb although they make a little more than needed for a family of four so we did a little adjusting.
