Costa Del Sol treats & recipes #VPeats

 I have recently been asked by Villa Plus to enter their foodie competition. I had to do a recipe you could cook it one of their self-catering villas local to a particular area. I was given Costa Del Sol, a beautiful stretch of coastal towns and villages stretching from Estepana through Malaga up to Nerja just below Grenada.

One of the things I remember most about the Costa del Sol was the lemons and fig trees, dropping down on to the paths and bending heavy branches overhead. So I had to use these as my main ingredients! As it’s for cooking on holiday I wanted something that could be prepared in 5 minutes and left and just tasted divine!
Prep time is less than ten minutes for a fruity, tasty, easy and cheap local dish! £2.75 per person which includes a starter, a main & bottle of beautiful Spanish wine! After all who on their holiday wants to spend any time over a hot stove?
We got as much as could out our local farmers shop but of course you could head straight to a market!

Starter – Sun soaked Stuff Figs

Ingredients

4 figs – either plucked straight off the tree or from the Market
Goats Cheese
4 Slices of smoky Bacon rashers

Method

Chop the top & tails off 4 figs and cut a cross in the top. Pop a slice of Goats cheese into the cross and wrap the fig & cheese with a rasher of bacon. Hold in place if needed with a cocktail stick. Pop into a hot oven (about 200) for 20 minutes.

Main Course – Lemon Chicken

Ingredients

Chicken cut into chunks
Potatoes, peeled, washed and cut into wedges
Onions, peeled and cut into wedges
Garlic, peeled
Sprigs of rosemary
Lemons 3 chopped into quarters 1 juiced
Olive oil
Salt and pepper

Method

Brown the chicken in olive oil. Pop into an oven proof dish with everything else and pop straight into a hot oven (200) for an hour. Go take your wine into the garden!!
