Cupcake Quiches - SpoiltPig & Denhay

With Wimbledon starting today and the weekend being spent pick your owning it truly feels as though summer is here. Roll on picnics and long lazy weekends at the beach or in fields. We tend to fill up the coolbox on a Saturday morning and just head out. One of our favourite recipes therefore is Quiche to take with us. SpoiltPig sent us recently a gorgeous hamper so that I could share their recipe with you for quiche but instead I’m sharing with you my cupcake quiches as I find they are much better for tiny hands to hold (the pastry keeps them intact) and also the middle doesn’t go soggy!
I have to say SpoiltPig Bacon is incredible and if you end up popping in a quiche like me buy double as you start to munch on the crispy bits and cant stop!


Pastry – either use prerolled (we used gluten free pre rolled)

175g Plain Flour
100g Very Cold Butter, diced
1 Egg Yolk
Iced Water

Filling

184g SpoiltPig smoked dry cured streak bacon, chopped
1 tbsp Oil
320ml Double Cream
4 Burford Brown Whole Eggs
2 extra Egg Yollk
Black Pepper

Pastry Method

1, If you’re making your own pastry put the flour, butter, egg yolk & 4tsp cold water into a food processor & using the pulse button, process until the mix just binds.
2 Roll the pastry out as thinly as you can and using a cutter cut 12 circles and place in a well-greased cupcake tray. Prick the bottom of the cases and chill for at least 10 minutes.
3, When ready to cook, put a baking sheet in the oven & heat oven to 180 degrees.
4, Pop in the oven (on the hot baking sheet) for 15 mins or until pale golden.


Filling Method

1, Heat the oil in a frying pan & cook the bacon for 8-10 minutes until cooked through and just crisp. Drain & spread half over the hot pastry bases.
2, Put the cream & eggs & extra yolks into a large bowl with a generous pinch of black pepper, and beat together slowly until combined, then give it a fast whisk for 30 seconds until frothy.
3, Pour over the bacon & sprinkle the remained of the bacon of the tops.
4, Bake for about 20 minutes. The quiches will be puffed up with the slightest wobbly in the centre. Allow to cool before serving.
