One bowl chocolate cake

This will have to be a short post as having spent a lovely time in the garden this weekend chopping down a horrible hedge and putting up fencing I hurt my shoulder and am tying this left handed! But you must try this scrummy quick to make cake! We made in it a Bundt tin and knocked ten minutes off the time and it was perfect!


Ingredients:
2 cups all purpose flour
2 cups sugar
3/4 cup unsweetened cocoa powder
2 tsp baking soda
1 tsp baking powder
pinch of salt
1 cup milk
1/2 cup vegetable oil
1 tsp pure vanilla extract
1 cup hot brewed coffee
2 eggs
4 oz. semi sweet chocolate chips
1 1/2 cups whipping cream
Directions:
Preheat oven to 175C and grease and flour two 6 inch cake pans. (I used a 9 inch bundt tin) In a bowl, mix together all the dry ingredients. Create a well in the centre and add all the rest of the ingredients except coffee. Mix well until combined and then add coffee. Mix once again (the batter will be very runny). Pour into greased pans and bake in the middle rack in the oven for approximately 45 minutes or until a skewer comes out just clean. Cool on a wire rack.

(I didn’t make the frosting – we ate the cake with fresh cream!)

To make the frosting, heat the whipping cream in a pan to a simmer (do NOT boil). Add to it chocolate chips and stir to combine until chips have melted. Refrigerate until cool and whip until stiff peaks form.

Cream will not whip if boiled or if not completely cold before whipping.
